Did you know you can make a restaurant-quality Blackened Chicken Caesar Salad at home in about 20 minutes? This simple recipe delivers bold, smoky flavor: chicken breasts seasoned with blackened spices and cooked until juicy, then served over crisp romaine tossed in creamy Caesar dressing. Finish with crunchy croutons and plenty of grated Parmesan for a satisfying, flavor-packed meal.

Bring the flavor to your next salad!

I’ve been making this salad for years. It’s my go-to when I want something quick, easy and full of flavor. Recently I shared it on Instagram and the response was overwhelming, so here’s the recipe you all asked for.

This Chicken Caesar Salad is flexible: you can use a store-bought Caesar dressing or make a homemade miso Caesar for extra depth. I also make my own blackened seasoning, but you can use a premade blend if you prefer.

Whether you’re meal-prepping for a busy week or need a fast, restaurant-quality dinner in under 30 minutes, this salad is an excellent choice.

Key ingredients

Below are the main ingredients and a few notes to help you shop and prepare. The full ingredient list with measurements is in the recipe card further down.

Chicken – Boneless, skinless chicken breasts are used here, but chicken thighs also work well, especially for grilling. Use what you prefer or have on hand.

Caesar dressing – A homemade miso Caesar adds extra umami, and it only takes minutes to blend. Store-bought dressing works fine too if you’re short on time.

Instructions

Step-by-step photos are provided below to make this recipe easy to follow. For the full recipe and video, see the recipe card at the bottom of the post.

Meal prep it

This salad is great to prepare ahead for quick lunches. To meal prep: roast and slice the chicken, chop the romaine, and make the dressing.

Store undressed lettuce, sliced chicken, and grated Parmesan together in a container. Keep the dressing separate in a small jar and croutons in a bag. When ready to eat, toss the lettuce with dressing, top with chicken and croutons, and enjoy.

Instructions

Preheat the oven to 425°F.

Slice two chicken breasts in half lengthwise. Season all sides with blackened seasoning, place on a baking sheet, and roast for about 15 minutes, or until the internal temperature reaches 165°F.

While the chicken roasts, toss the romaine lettuce with the Caesar dressing in a large bowl.

Store any extra in an airtight container for up to 6 months.

Alternative cooking methods: You can cook the chicken in a hot cast-iron skillet for about 5–7 minutes per side, on a grill, or in an air fryer at 400°F for about 12 minutes, flipping halfway. Always check for 165°F internal temperature.

Gluten-free option: Omit the croutons to make this salad gluten-free.

Bring the flavor to chicken skewers!

A few weeks ago I hosted a big Greek dinner party called “Santorini Under the Stars.” I wanted an authentic menu showcasing favorite island dishes, so Greek souvlaki was an essential choice. Traditionally, souvlaki is made by marinating meat—such as chicken, pork, or lamb—skewering it, and grilling over high heat.

This recipe is straightforward and requires about 25 minutes of hands-on time. After marinating for a few hours, the chicken absorbs bright lemon and herb flavors that shine whether you serve it in warm pita with creamy tzatziki or over a Greek orzo salad. It’s light, fresh, and full of Mediterranean character.

Key ingredients

The photo above shows the main ingredients to help with your shopping. Notes on specific items follow; full measurements are in the recipe card below.

Chicken – This version uses boneless, skinless chicken breasts cut into 1-inch cubes. You can substitute boneless chicken thighs, pork tenderloin, or lamb leg or shoulder. Cutting to uniform 1-inch pieces helps the marinade penetrate evenly and ensures even cooking.

Dried herbs – Use dried oregano, parsley, and dill so the herb flavors infuse the meat without burning on the grill. Fresh herbs are lovely but are more delicate and can char over high heat.

Vegetables: Thread onions, bell peppers, zucchini, or mushrooms between pieces of chicken if you’d like; plan for extra skewers.

Bring rich, umami flavors to your next meal!

When I first tasted mushroom jam on a menu in Spain, it was paired with burrata, crackers, and roasted cherry tomatoes — an unexpectedly delicious combination. That experience stuck with me and inspired this recipe.

I adapted ideas from my popular bacon jam recipe, added extra umami with white miso paste, and developed a version that complements mushrooms beautifully. The result is a versatile jam I now enjoy on everything.

For a tapas-style appetizer, I spoon it over whipped goat cheese and top with roasted peppers and thyme. It’s also a fantastic burger topper, a flavorful steak garnish, or a simple spread for crackers and bread. If you love mushrooms, this jam is likely to become a new favorite.

Key ingredients

Below are notes on the main ingredients. The full ingredient list with measurements appears in the recipe card further down.

Mushrooms – Use baby bella (cremini) mushrooms for a deeper, earthier flavor and a firmer texture that holds up during simmering. You can also mix varieties to add complexity.

White miso paste (shiro miso) – This mild, slightly sweet miso adds umami without overpowering the jam. If you don’t have miso, ½ tablespoon soy sauce can be used as a substitute.

Instructions

Step-by-step photos are included below to make the process easy. For the full recipe card with exact measurements, see the recipe section at the bottom.

Ways to use it

This mushroom jam elevates snacks, mains, and party bites. A few favorite uses:

Spread whipped goat cheese on crackers or baguette slices, top with mushroom jam, diced roasted peppers, and thyme for a tapas-style appetizer.

Use as a gourmet burger topping; it pairs especially well with Swiss or Gruyère cheese.

Top baked brie or other warm cheeses for an impressive party bite.

Serve as a savory spread with crackers or on a charcuterie board.

Instructions

Heat the olive oil in a large skillet over medium-high heat.

Add the diced onions and cook for about 15 minutes, stirring occasionally, until caramelized.

Add the mushrooms and garlic. Sauté until the mushrooms release some of their liquid, about 8–10 minutes. Continue cooking 2–3 minutes after liquid appears.

Stir in the maple syrup, brown sugar, and apple cider vinegar. Cook until the mixture thickens and most of the liquid evaporates, about 5–7 minutes.

Mix in the miso paste and cook 1–2 more minutes. Taste and add salt if needed.

Remove from heat and let cool. Transfer to an airtight container and refrigerate for up to 7 days.

Notes

If you prefer a smoother, less chunky jam, pulse it a few times in a food processor, leaving some texture.

To make a spicy version, stir in 1 teaspoon red pepper flakes or crushed Aleppo pepper with the miso paste.

Store refrigerated up to 7 days. Serve cold or gently reheat in the microwave for 60–90 seconds or in a small skillet over medium heat for 4–5 minutes.

Bring the flavor to pasta night!

This dish is big on flavor and low on effort — perfect for busy evenings. It works wonderfully as a vegetarian main or topped with seared or roasted chicken for extra protein.

Fair warning: the sauce is addictive. The combination of tangy sun-dried tomatoes, creamy dairy, and savory seasonings makes this one you’ll keep returning to.

Key ingredients and substitutions

The photo above gives a clear visual of what you’ll need. Below are notes on a few ingredients and simple swaps. The full ingredient list and measurements are in the recipe card below.

Pasta – penne, rigatoni, or cavatappi all work well. Use your favorite short pasta shape.

Shallot – offers a mild, slightly sweet onion flavor. If you don’t have shallot, use red onion, keeping in mind it will be sharper.

Sun-dried tomatoes – if you buy them in oil, drain them before measuring.

Italian seasoning – a blend of dried herbs adds instant depth. Use a store-bought mix or a quick homemade blend.

Half and half – for an even richer sauce use heavy cream.

1 cup cherry tomatoes, halved

Equipment

12 inch skillet

Instructions

Add the pasta to a large pot of boiling salted water and cook until al dente according to the package instructions. Drain and set aside.

While the pasta cooks, heat butter in a large skillet over medium-high. Add the shallots and sun-dried tomatoes and cook until the shallots are softened, about 3–5 minutes. Add garlic and cook 1 more minute.

Stir in the tomato paste, Italian seasoning, and salt until combined.

Slowly pour in the half and half, stirring to incorporate and bringing the mixture just to a gentle simmer.

Add the spinach, parmesan, and cherry tomatoes. Reduce heat to low and simmer until the cheese melts and the spinach wilts, about 8–10 minutes.

Toss the cooked pasta into the sauce to coat. Let it sit for 5 minutes so the pasta absorbs the sauce and it thickens slightly.

Serve topped with extra parmesan and fresh parsley or basil if desired.

Notes

To make Tuscan chicken pasta: roast a seasoned boneless, skinless chicken breast at 425°F for 15–20 minutes, slice or dice, and add to the finished pasta.

Vegetable additions: sautéed mushrooms or oven-roasted zucchini make great additions for extra texture and flavor.

Gluten free: swap in gluten-free penne to make this recipe gluten free.

Storage: Keep leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently in the microwave or on the stove; the flavors often deepen overnight.

Bring the flavor to BBQ salmon!

I love glazing salmon and finishing it in the oven. If you enjoy quick glazed salmon recipes, try my Balsamic Glazed Salmon or Miso Salmon for other easy weeknight options.

To change up my routine, I created this BBQ-glazed salmon baked alongside sweet potatoes. It was too delicious and simple not to share.

Filets are seasoned with a bold, smoky BBQ rub, then brushed with BBQ sauce to create a caramelized glaze. The sweet potatoes get the same rub and roast next to the salmon, giving the dish sweet and smoky balance. It’s an effortless, crowd-pleasing recipe for busy evenings.

Key ingredients

Below are notes on the main ingredients and how they affect the dish. The full ingredient list with measurements is in the recipe card further down.

BBQ seasoning – You can make a homemade rub ahead of time or use a store-bought BBQ seasoning. A blend with brown sugar, smoked paprika, garlic powder, onion powder, and chili powder works well.

BBQ sauce – Use a bottle you enjoy. The BBQ sauce creates the glossy, caramelized finish on the salmon.

Salmon – Use skin-on or skin-off fillets, aiming for fillets of similar size so they cook evenly. Fillets about 1 inch thick pair well with the cook time for the sweet potatoes.

Instructions

Step-by-step photos are included to make this recipe easy to follow. For the complete recipe, see the recipe card below.

How to serve it

The salmon and sweet potatoes make a complete meal on their own, but a crisp side salad adds freshness and balance.

You can roast other vegetables on the same sheet pan—diced zucchini, broccoli, or cauliflower work well and will cook in about 15 minutes. Toss with olive oil and a little BBQ seasoning, then add them to the pan with the sweet potatoes.

To turn this into a grain bowl, serve the salmon and sweet potatoes over quinoa or rice and top with a fresh fruit salsa, such as pineapple or mango–avocado salsa, for brightness.

1 tablespoon olive oil

¼ cup BBQ sauce

Instructions

Preheat the oven to 425°F (220°C).

Line a large sheet pan with nonstick foil or parchment paper.

Add the diced sweet potatoes to the pan, drizzle with olive oil, then sprinkle 2 tablespoons of the BBQ seasoning over the potatoes and toss to coat. Push them to one side of the sheet pan.

Place the salmon on the other side of the pan, season with the remaining 1 tablespoon of BBQ seasoning, and brush the tops with BBQ sauce.

Roast in the oven for 12–15 minutes, until the salmon flakes easily and the sweet potatoes are tender.

Notes

Dice sweet potatoes into small ¼-inch cubes. Small cubes cook in 12–15 minutes alongside the salmon. Larger pieces will take longer.

If you only want salmon, use 1 tablespoon BBQ seasoning on the fillets and skip the sweet potatoes and olive oil.

Other vegetables work, too: diced zucchini, broccoli, cauliflower, bell peppers, or asparagus can be roasted with the salmon.

To grill instead: season and brush the salmon with BBQ sauce, then grill skin-side down over medium-high heat for about 12–15 minutes.

Up the flavor of Caesar dressing!

I first spotted miso Caesar dressing on a restaurant menu and knew I wanted to recreate it at home. After several tests and tweaks I landed on a version with a perfect balance of umami, salt, and bright acid.

Now it’s a regular in my fridge. It takes only five minutes to blend, so I make it often and use it on everything from salads and grain bowls to grilled meats. When I brought it to a neighbor’s birthday salad, everyone’s first reaction was “WOW!”

I can’t wait for you to try it and discover the same WOW factor in this miso Caesar dressing.

Key ingredients

The photo above shows the ingredients at a glance to help with shopping. Below are a few notes about key items. The full ingredient list with measurements appears in the recipe card below.

White miso paste – also called shiro miso. This miso ferments for a shorter time, so it’s milder, slightly sweet, and less salty than darker miso varieties. I recommend white miso for this dressing because stronger misos can overpower the balance of flavors.

Kewpie mayonnaise – any mayonnaise will work, but Japanese-style mayo like Kewpie is richer and creamier because it’s made with only egg yolks. It adds extra silkiness to the dressing, but use your preferred mayo if needed.

Instructions

Place all ingredients in a blender and process until smooth. That’s it—super simple and packed with flavor.

Ways to use it

Dip it — Use the dressing as a dip for raw vegetables, fries, or chicken tenders. Its creamy texture and savory depth make it a great snack or appetizer sauce.

Toss it — For a classic Caesar-style salad, toss 4 cups of chopped romaine with about 1/4 cup of this dressing, then add Parmesan, croutons, and black pepper.

Drizzle it — A little drizzle over roasted or grilled vegetables adds bright, savory flavor.

Spread it — Spread the dressing on sandwiches, wraps, or burgers for an umami-packed boost. It pairs especially well with melty cheese, crisp lettuce, and seared meats.

It’s also delicious on grilled Caesar salad, in chicken Caesar tacos, tossed into pasta salad, drizzled over pizza, or used to finish grain bowls. The uses are endless—once you try it, you’ll likely want to add it to many meals.

Turn your kitchen into a French bakery!

My husband once bought a huge block of gorgonzola and that inspired this new favorite appetizer. I love pears and gorgonzola together, and when I tried the upside-down puff pastry tart technique, the result was this easy, elegant tart.

These tarts work as an appetizer, a special breakfast, or a simple snack. They balance sweet and savory—honey and pears paired with the funky umami of gorgonzola—all wrapped in buttery, flaky puff pastry.

Key ingredients

Below are a few notes on ingredients and choices. The full ingredient list with measurements appears in the recipe card.

Fresh pears – Bartlett, Bosc, or Anjou work well. Bartletts are slightly tangy and pair beautifully with gorgonzola.

Gorgonzola – A softer, creamier blue cheese than some varieties. Chill it well and slice while cold. You can substitute a standard blue cheese if you prefer a more pungent flavor.

Ingredients

1 sheet puff pastry dough, thawed

2 pears, thinly sliced

6 teaspoons honey, plus more to finish

1 teaspoon fresh thyme leaves

1/4 teaspoon salt

1/4 teaspoon black pepper

4 ounces gorgonzola cheese, thinly sliced

1 egg, whisked

Equipment

Baking sheet (lined with parchment)

Instructions

Thaw the puff pastry on the counter for 30–60 minutes.

Lightly flour a board, roll the pastry slightly thinner, and cut into 6 equal rectangles.

Preheat oven to 400°F and line a baking sheet with parchment paper.

Arrange 4–5 overlapping pear slices in a row on the parchment; repeat to make six stacks, leaving 2–3 inches between each.

Drizzle ~1 teaspoon honey onto each pear stack, then sprinkle with thyme, salt, and pepper.

Top each stack with another layer of pears and a slice of gorgonzola. Place a puff pastry rectangle on top and press edges with a fork to seal.

Brush each pastry top with the whisked egg and bake for about 15 minutes, until puffed and golden.

Cool 3–5 minutes, then carefully flip each tart with a spatula. Drizzle extra honey and garnish with thyme. Serve warm or at room temperature.

Notes

The tarts keep in an airtight container in the fridge for up to 6 days. Reheat briefly in an air fryer or oven before serving, or enjoy cold.

For extra sweetness, drizzle more honey after baking. For a more savory result, skip the finishing honey.

Bring flavor to taco night

If you love your air fryer, these chicken tacos will become a go-to. Cooking chicken breasts in the air fryer is practically foolproof. A few tips to get perfect results:

Butterfly the chicken so pieces are about 1/2 inch thick. This helps them cook evenly in roughly 12 minutes while staying juicy inside.

Use a generous seasoning — about 3 tablespoons for 1 1/2 pounds of chicken (split into 4 pieces) gives great flavor. Homemade or store-bought taco seasoning both work.

Brush on sauce at the end of cooking for the best glaze and caramelization. Apply the chipotle honey sauce during the last 2 minutes so it clings to the chicken without burning.

Seasoning + chicken + sauce + 12 minutes in the air fryer = a flavorful meal in about 20 minutes.

Key ingredients

The photo above shows the main ingredients to help with your shopping. Notes on key components follow; full measurements are in the recipe card below.

Chicken – Boneless, skinless chicken breasts are shown, but boneless skinless thighs work too. Thighs may need an extra 3–4 minutes of cook time. Use an instant-read thermometer to confirm an internal temperature of 165°F.

Taco seasoning – Homemade or store-bought both work. If using a packet from the store, check the weight: many packets contain about 2 tablespoons, and this recipe calls for roughly 3 tablespoons total.

How to serve the chicken

This chicken is versatile: use it in tacos, burrito bowls, or on salads. Here are a few favorite presentations:

Tacos – Dice or slice the chicken and pile it into tortillas with toppings like guacamole, shredded lettuce, tomatoes, pickled onions, cotija cheese, and cilantro.

Bowls – Start with a base such as cilantro lime rice, add the chicken, then top with beans, corn, avocado, and salsa for a balanced bowl.

Salad – Serve sliced chicken over a simple salad of greens, red onion, and tomato with a smoky vinaigrette. It’s also excellent over corn or chopped romaine salads.

You can also serve the chipotle honey chicken as an entrée with Mexican sides such as Mexican rice, black beans, or fresh tomato salsa and tortilla chips.

Bring authentic gyro flavor into your kitchen!

I took everything that makes a gyro so irresistible—juicy ground lamb and beef, fresh herbs, and fragrant spices—and turned it into quick, tender meatballs. They brown beautifully under the broiler for a crisp exterior while staying juicy inside.

This recipe began as an attempt to recreate traditional gyro meat at home. Baking in a loaf or wrapping the mixture in parchment gave the right flavor but not the right texture. Broiling the meatballs produces the best result: a nicely browned crust and perfectly tender interior. These meatballs are a great shortcut to gyro flavor without special equipment.

Whether tucked into warm pita with toppings or served over a bed of grains and vegetables, these gyro meatballs make a fast, flavorful dinner any night of the week.

Key ingredients

The photo above shows the ingredients to help with your shopping. Notes on key ingredients are below. See the recipe card for the full measurements.

Ground meat – A mix of half ground lamb and half ground beef gives a classic gyro flavor. You can substitute all beef or a beef-pork mix if preferred.

Fresh herbs – Fresh dill and parsley brighten the meatballs. If needed, use about 1 tablespoon each of dried dill and dried parsley as a substitute.

How to serve them

These meatballs are great in pita or served in Mediterranean-style bowls.

To make traditional gyros: Warm pita and fill with meatballs, lettuce, tomato, cucumber, feta, and creamy tzatziki.

To make bowls: Use a base like lemon-dill quinoa. Cook quinoa, stir in lemon juice and fresh dill, then top with meatballs and tzatziki. Add toppings such as tomatoes, pickled onions, pepperoncinis, cucumbers, lettuce, feta, and crispy chickpeas if you like. These bowls are excellent for meal prep and keep well for the week.

Ingredients

½ pound red onion, roughly chopped

6 sprigs fresh dill

6 sprigs fresh flat-leaf parsley

3 cloves garlic, coarsely chopped

1 pound ground beef

1 pound ground lamb

2 eggs

½ cup breadcrumbs

1 tablespoon kosher salt

1 tablespoon dried oregano

2 teaspoons lemon pepper

1 teaspoon coriander

1 teaspoon ground cinnamon

Instructions

Heat the oven broiler to high. Place one rack in the middle and one in the bottom of the oven.

Add the red onion, dill, parsley, and garlic to a food processor. Pulse 15–20 seconds until finely chopped.

In a large bowl, combine the ground beef, ground lamb, and the herb mixture. Add the eggs, breadcrumbs, salt, oregano, lemon pepper, coriander, and cinnamon. Mix with your hands until fully combined.

Form the mixture into about 32 golf-ball-sized meatballs.

Place the meatballs on a parchment-lined sheet pan in a single layer. Broil on the top rack for 6 minutes, then move to the bottom rack for 2–3 minutes more, or until the internal temperature reaches 160°F. Alternatively, bake at 400°F for 15–20 minutes.

Notes

All ovens vary—watch the meatballs while broiling. If they brown too quickly on top, move them to the bottom rack sooner.

If you don’t have a food processor, finely dice the onion, garlic, and herbs by hand.

You can make uncooked meatballs ahead and keep them in the fridge up to 3 days, or freeze uncooked for up to 6 months.

Store cooked leftovers in an airtight container in the fridge for up to 6 days. Reheat in an air fryer for 3–4 minutes or in a skillet over medium-high heat.
