This cozy chicken miso soup is my high-protein take on the viral broth bowl trend. A savory ginger-miso chicken bone broth is ladled over crispy, miso-glazed ground chicken, rice and edamame, then finished with a jammy egg, chili crisp, sesame seeds and green onions. Ready in about 25 minutes, each bowl delivers a satisfying hit of flavor and protein.

Bring the flavor to the broth bowl trend!

Broth bowls have become a popular way to enjoy a comforting meal that’s equal parts soup and rice bowl: cooked rice and protein sit in the center while a hot, flavorful broth is poured around them. This version swaps coconut-based broths for a lighter, restaurant-style ginger miso broth that still feels hearty enough for dinner.

To maximize flavor with minimal effort, I use one miso-ginger sauce twice — half to season the bone broth and half to glaze the ground chicken so it caramelizes and crisps. The result is a layered, savory bowl that’s quick to pull together.

  1. High in protein. Using chicken bone broth and ground chicken boosts protein significantly; this recipe yields a very protein-forward bowl.
  2. One sauce, two purposes. Miso, soy, fresh ginger, toasted sesame oil and chili garlic sauce flavor both the broth and the chicken, so you don’t need multiple sauces or steps.
  3. Fast and weeknight-friendly. The whole dish finishes in about 25 minutes: the broth simmers while the chicken browns, then you assemble and top.

Key ingredients

Below are the main ingredients I recommend, why they work and suggested swaps. For exact measurements and the full recipe, see the recipe card further down.

  • White miso paste (shiro miso) — mild and slightly sweet, it gives the broth that familiar miso soup character. Avoid strong red miso here to keep the flavor balanced.
  • Low-sodium soy sauce — pairs with miso without over-salting the broth. Use tamari or coconut aminos to make the bowl gluten-free.
  • Fresh ginger — grated ginger brightens the broth with a warm, aromatic kick. Ginger paste works in a pinch.
  • Toasted sesame oil — a small amount adds rich, nutty depth; be sure it’s labeled “toasted.”
  • Chili garlic sauce — for heat and garlicky umami. Adjust to taste.
  • Chicken bone broth — the protein-forward base that makes these bowls substantial; bone broth delivers more protein than typical broth.
  • Ground chicken — cooks quickly and crisps when glazed. Ground turkey is a great alternative; lean beef also works.
  • Cooked rice — white, brown or jasmine rice are all good; leftover rice speeds up assembly.
  • Shelled edamame — adds texture and plant-based protein.
  • Toppings — green onions, cilantro, sesame seeds, chili crisp and a soft-boiled or jammy egg finish the bowl and add richness.

Instructions

Quick overview of the method — detailed steps are available in the recipe card below. The process is straightforward: mix the sauce, simmer the broth with half the sauce, cook the ground chicken with the remaining sauce until caramelized, then assemble bowls.

To assemble: Divide the chicken between two bowls, add a cup of cooked rice to each, then ladle the hot miso-ginger bone broth around the rice and chicken. Top with edamame, green onions, sesame seeds, chili crisp and a jammy egg.

Make it your own

These bowls are highly adaptable. A few ways to customize:

  • Use noodles instead of rice. Ramen, udon, soba or rice noodles turn the dish into a cozy miso noodle soup. Cook separately and add to bowls before ladling broth.
  • Add extra vegetables. Stir in baby spinach, bok choy, snap peas or shredded carrots in the last few minutes of simmering for a veggie boost.
  • Adjust the spice. Add more chili garlic sauce or finish with a spoonful of chili crisp to make it spicier.

Your chicken broth bowl questions, answered

  • What are broth bowls? Bowls of rice and protein surrounded by a hot, seasoned broth — a hybrid between a rice bowl and a soup.
  • Does miso soup have protein? Plain miso soup has only a few grams of protein. This recipe is designed to be protein-rich thanks to bone broth, ground chicken and edamame.
  • Should you boil miso? No — boiling miso can flatten its flavor. Stir miso into hot broth and keep a gentle simmer rather than a rolling boil.
  • Is this coconut-free? Yes — this version uses a ginger-miso broth rather than coconut milk.
  • Can I swap the protein? Yes — ground turkey, beef or a plant-based ground option can be used instead of chicken.
  • Too salty? Balance with a splash of water, a squeeze of lime, or add more rice to the bowl.

Ingredients

Miso ginger sauce

  • 4 tablespoons white miso paste
  • 2 tablespoons low-sodium soy sauce (or tamari)
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon chili garlic sauce

Broth bowls

  • 4 cups chicken bone broth
  • 1 pound ground chicken
  • 2 cups cooked rice
  • 1 cup shelled edamame

Optional toppings

  • cilantro
  • green onions
  • chili crisp
  • sesame seeds
  • soft-boiled or jammy eggs

Instructions

  • In a small bowl, whisk the miso paste, soy sauce, grated ginger, toasted sesame oil and chili garlic sauce until smooth.
  • Heat the chicken bone broth in a large pot over medium-high and bring to a simmer. Stir in half the miso-ginger sauce (about 2 tablespoons) until dissolved. Reduce heat and keep just below a boil; do not boil.
  • Heat a large skillet over medium-high. Add the ground chicken and cook, breaking it up, until nearly cooked through (about 5–7 minutes). Pour the remaining sauce over the chicken, stir to coat, then let it cook without stirring for about 5 minutes so the glaze caramelizes and the chicken crisps.
  • Divide the cooked chicken between two bowls. Add 1 cup cooked rice to each bowl and ladle the hot broth around the rice and chicken.
  • Top with edamame and optional toppings: green onions, cilantro, sesame seeds, chili crisp and a soft-boiled or jammy egg.

Notes

  • Nutrition: Nutrition values provided with this recipe reflect the two-bowl batch without optional toppings. Adding an egg to each bowl increases protein by roughly 6 grams.
  • Don’t boil the miso: keep the broth at a gentle simmer after adding miso to preserve flavor.
  • Gluten-free option: swap tamari or coconut aminos for soy sauce and check labels on condiments.
  • Storage: Store broth, chicken and rice separately in airtight containers in the refrigerator for up to 4 days. Reheat broth gently on the stove; avoid boiling.
