- 4 cups chicken broth (or vegetable broth for a vegetarian option)
- 1 cup cornmeal (fine-ground for creamy polenta)
- 1 tsp black pepper
- 1 ½ tsp dried basil, divided (for both polenta and shrimp)
- 1 ½ tsp dried oregano, divided (for both polenta and shrimp)
- 1½ tsp dried parsley, divided (for both polenta and shrimp)
- ½ lb shrimp, peeled & deveined (fresh or frozen, thawed)
- 1 tbsp olive oil (extra virgin recommended)
- ½ tsp kosher salt
- ¼ cup half and half (for richness, heavy cream can also be used)
- ¼ cup parmesan cheese, grated (freshly grated is always best!)
