Ingredients

  • 3 large eggplants, sliced lengthwise into 8 slices each (total 24 slices)
  • 1 tsp salt, divided
  • 2 tbsp olive oil, divided
  • ½ cup onion, diced
  • 1 cup baby bella mushrooms, sliced
  • 6 cloves garlic, minced – divided
  • 1 lb ground turkey
  • ½ cup sun dried tomatoes
  • 2 tbsp fresh parsley, chopped – divided
  • 2 tsp dried oregano – divided
  • 2 tbsp fresh basil, chopped – divided
  • 14.5 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 6 oz can tomato paste

Instructions

  1. Preheat the oven to 400°F.
  2. Lightly salt the eggplant slices and allow to rest for 10-15 minutes to remove excess moisture. This critical step ensures a firm, non-watery roll-up.
  3. After 15 minutes, thoroughly wipe the eggplant with paper towels to absorb all released moisture.
  4. To cook the eggplant: You can either grill the slices for 2-3 minutes per side on an oiled grill over medium heat for a slight char, or spread them out on oiled baking sheets and roast in the oven for 15-20 minutes until tender and pliable.
  5. Once the eggplant is cooked to your preference, set it aside on a plate to cool slightly.

  9. Stir in the sun-dried tomatoes, 1 tbsp fresh parsley, 1 tsp dried oregano, and 1 tbsp fresh basil into the ground turkey mixture. Reduce the heat to low and let it simmer gently for 5-10 minutes, allowing the flavors to meld beautifully.
  10. While the turkey mixture simmers, heat the remaining tablespoon of olive oil in a separate oven-safe large skillet or Dutch oven over medium-high heat.
  11. Add the remaining 3 cloves of minced garlic to the hot oil and sauté quickly for 30-60 seconds, being careful not to burn it.
  12. Pour in the diced tomatoes, tomato paste, tomato sauce, and the remaining ½ tsp salt, 1 tbsp parsley, 1 tsp oregano, and 1 tbsp basil. Stir well to combine.

  14. Once the sauce is simmering, turn off the heat from the ground turkey mixture.
