  3. Crock Pot Method: For a more hands-off approach, add your chicken breasts to a slow cooker and cover them with water or chicken broth. Ingredients

  • 12 oz uncooked penne pasta
  • 2 tbsp butter
  • 1 cup onion, thinly sliced
  • 1 cup bell pepper, thinly sliced
  • 8 oz baby bella mushrooms, sliced
  • 1 cup sour cream
  • ½ cup beef broth

  • 2 cups cooked, shredded chicken breast, boil or pressure cook 1 lb of chicken and shred
  • ½ cup gruyere cheese, shredded

Instructions

  1. Bring a large pot of salted water to boil, add the penne pasta and cook according to package directions. Drain and set aside.
  2. Add the butter to a large skillet over medium high heat.
  3. Once the butter has melted, add the onions, bell peppers and mushrooms, sauté for 5-6 minutes until tender.
  4. Add the sour cream, beef broth and French onion dip mix to the sautéed veggies. Stir everything together until well combined and simmer for 2-3 minutes, allowing the sauce to thicken slightly.
