My role was to demonstrate how modern technology can elevate the home kitchen experience, specifically focusing on integrating WiFi-enabled devices and smart appliances into everyday cooking. However, this time, with Baton Rouge deeply immersed in football season festivities, I decided to pivot towards a more casual, game-day friendly offering. My aim was to showcase the versatility of sous vide for entertaining, making it accessible even for events like tailgating.

To complement the sous vide sliders, I also served other crowd-pleasing game day recipes such as my popular Slow Cooker Green Chili Queso Dip and festive Football-Shaped Nutella Rice Krispie Treats. The choice of sliders for the sous vide demonstration was deliberate: they are absolutely perfect for tailgating scenarios. Imagine this: you can prep your burger sliders at home, cook them to perfection in the sous vide, then transport them to the tailgate party. A quick sear on a portable grill upon arrival is all it takes to finish them, resulting in the most succulent, flavorful, and incredibly juicy sliders your guests have ever tasted. This method ensures that even in a bustling tailgating environment, you can serve restaurant-quality burgers with minimal fuss.

When a friend first suggested making a sous vide burger, I admit I was skeptical. My initial thoughts drifted to concerns about texture – would it feel rubbery? Would it brown properly?   • 2 pounds ground beef (preferably 80/20 for optimal juiciness)
  • 2 tablespoons Montreal steak seasoning or your favorite burger seasoning
  • 1 tablespoon olive oil (for searing)
  • 12 small slices cheddar cheese (or your preferred cheese)
  • 12 Hawaiian rolls (or other soft slider buns)

Step-by-Step Instructions: Crafting Your Sous Vide Sliders

Creating these incredible sous vide burger sliders is a straightforward process, broken down into a few simple steps:

  1. **Prepare the Burger Patties:** In a large bowl, gently combine the ground beef with your chosen steak or burger seasoning.   1. **Achieve a Vacuum Seal (Water Displacement Method):** If you don’t own a dedicated vacuum sealer, don’t worry! The “water displacement method” is highly effective and easy to perform. Place a bag containing the sliders into a large pot or container of water, submerging it almost entirely. Leave about an inch of the top of the bag open above the water line. The water pressure will naturally push out nearly all the air around the food inside the bag. Once the air is expelled, carefully seal the zipper bag completely. Repeat for all bags. This creates an airtight seal essential for sous vide cooking.
  1. **Sous Vide Cooking:** Submerge the sealed bags of sliders in your preheated sous vide water bath. For a perfect medium-rare to medium burger, set your sous vide precision cooker to 130°F (54.4°C). If you prefer your sliders cooked to a medium to medium-well doneness, set the sous vide to 138°F (58.9°C). Allow the sliders to cook for a minimum of 45 minutes and up to 3 hours. The beauty of sous vide is that the longer cooking time within this window won’t overcook your burgers; it will only tenderize them further, offering incredible flexibility if you’re multitasking or waiting for guests to arrive.
  2. **Resting Period:** Once the sous vide cooking is complete, carefully remove the bags from the water bath and take the sliders out of their bags. Place them on a paper towel-lined cutting board and let them rest for 10-15 minutes. This allows any surface moisture to dissipate, which is crucial for achieving a superior sear.
  3. **The Perfect Sear:** Before serving, heat the olive oil in a cast iron skillet over high heat until it’s shimmering and just starting to smoke. A hot pan is key for a great crust. Add the rested sliders to the skillet and sear for just 20-30 seconds per side. This rapid, high-heat sear creates a beautiful brown crust and adds depth of flavor without cooking the interior any further.
  4. **Alternative Searing Method:** If you have a grill handy, especially for tailgating, you can achieve an equally fantastic sear. Preheat your grill to high heat and grill the sliders for 20-30 seconds per side, just enough to get those coveted grill marks and a delicious crust.
  5. **Final Assembly:** Immediately after searing, top each hot slider with a small slice of cheddar cheese. The residual heat will gently melt the cheese to gooey perfection. Serve these glorious sous vide sliders on soft Hawaiian rolls.

While you can certainly customize your sous vide sliders with your favorite toppings – such as classic ketchup, mustard, a special burger sauce, crisp pickles, fresh tomatoes, or thinly sliced onions – I highly recommend trying these burgers “as is” for your first experience. A sous vide burger is truly not your normal burger. It’s a burger of monumental flavor proportions, so incredibly rich and satisfying that I often find it needs no additional embellishments. The pure taste of the perfectly cooked, seasoned beef shines through.

  7. Remove the sliders from the sous vide and their bags. Let them rest on a paper towel-lined cutting board for 10-15 minutes.
  8. Heat olive oil in a cast iron skillet over high heat until shimmering.
  9. Add the sliders to the hot skillet and sear for 20-30 seconds per side to create a crust.
  10. Alternatively, grill the sliders on high heat for 20-30 seconds per side.
  11. Top each slider with a slice of cheddar cheese and serve immediately on Hawaiian rolls.
