Bring the authentic San Diego taco shop experience into your kitchen with this classic California Burrito. Warm flour tortillas are layered with juicy grilled carne asada, creamy guacamole, bright pico de gallo, plenty of melty cheddar, and the defining addition that makes it a true California burrito: crispy french fries. This is comfort food with bold, layered flavors — a satisfying meal the whole family will love.

Bring San Diego flavor to your kitchen!
Having lived in San Diego for over two decades, I can tell you the California burrito is a local favorite for a reason. This recipe honors the classic taco shop version — simple, honest ingredients and one small twist for extra texture and flavor. My approach keeps it true to the original while elevating the experience with an extra layer of crisped cheese.
You can make every component from scratch or use store-bought shortcuts depending on how much time you have. Homemade fries, guacamole, and pico de gallo are wonderful, but good-quality store items work fine too. The one element worth making at home when possible is the carne asada: a well-seasoned, grilled skirt or flank steak sets the foundation for the whole burrito. A simple marinade of oil, citrus, and soy sauce, combined with a carne asada spice blend, adds bright, savory depth to the meat.
I often prepare this burrito when I have leftover carne asada, or I’ll quietly save a portion of steak before the rest disappears so I can make burritos the next day. The flavors actually improve as the steak rests in the refrigerator for a short time.
I hope this recipe brings a little slice of San Diego to your home — delicious, satisfying, and full of character.

Sauces to serve with it
Choosing the right sauce elevates the burrito even more. At taco shops you’ll typically find a salsa bar; at home, a few thoughtful sauces will do the trick. Creamy jalapeño-style sauce, smoky chipotle crema, and a roasted poblano sauce each pair beautifully with the rich carne and crispy fries. If you prefer, a bright salsa verde or simple hot sauce is also excellent.
Some people feel the burrito is perfect on its own — it’s certainly flavorful — but a spoonful of sauce adds contrast and takes every bite to another level.

Ingredients
Carne Asada
- 1 pound skirt steak (or flank steak)
- 1 tablespoon olive oil (or vegetable oil)
- 2 tablespoons carne asada seasoning
Burritos
- 1 cup cooked french fries
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1 cup guacamole
- 1 cup pico de gallo
Instructions
Make the carne asada
- Rub the steak with olive oil and coat all sides with the carne asada seasoning. If time allows, marinate up to 8 hours for deeper flavor.
- Preheat a grill or a hot cast-iron skillet to high heat.
- Cook the steak 3–5 minutes per side depending on thickness and cut. Aim for 135°F for medium-rare. Skirt cooks faster (about 3–4 minutes per side); flank may need about 5 minutes per side.
- Remove from heat, tent loosely with foil, and let rest while you prepare the other components.
Prepare the burrito fillings
- Cook frozen fries in an air fryer or oven until crisp. Alternatively, make fresh fries if preferred.
- While fries cook, make guacamole and pico de gallo, or use store-bought versions.
Assemble the burritos
- Heat 1/4 cup shredded cheddar in a large skillet over medium-high heat until it crisps and turns golden, about 3–4 minutes. Lay a tortilla on top and press gently, then flip the tortilla so the crispy cheese is on top.
- Add 1/4 cup guacamole, 1/4 cup pico de gallo, 1/4 cup cooked fries, and about 1/4 pound diced carne asada to each tortilla. Top with 1/4 cup shredded cheddar.
- Fold the ends of the tortilla over the filling, then roll tightly. Repeat for the remaining tortillas.
- Return the skillet to medium-high heat. Place burritos seam-side down and toast 3–4 minutes, flip and toast another 3–4 minutes until both sides are golden and the cheese inside is melted.
- Remove from heat, slice in half if desired, and serve with your favorite salsa, hot sauce, or crema.
Notes
- For extra flavor, toss cooked fries with a small amount of carne asada seasoning before adding them to the burritos.
- You can make the carne asada ahead of time. Store the whole rested steak in an airtight container in the refrigerator for up to 2 days. When ready, dice and warm briefly in a skillet before assembling.
- If you don’t have a grill, sear the steak in a very hot cast-iron skillet or grill pan on the stovetop. Cook 4–5 minutes per side for medium-rare depending on thickness, then rest before slicing.
- Leftover burritos keep well in the refrigerator for up to one week. Reheat in a skillet, air fryer, or microwave until warmed through.
- To freeze, wrap each assembled burrito tightly in foil, place in a freezer bag, and freeze up to six months. To reheat, remove foil and microwave for about 4 minutes, then crisp in a skillet or air fryer for a golden exterior.
