Homemade Chicken Taco Seasoning Mix Recipe

While traditional taco seasoning is built to stand up to beef with heavy, earthy spices, this Chicken Taco Seasoning is crafted specifically for poultry. It’s a brighter, lighter blend with a touch of smoke that enhances chicken without overpowering it. Use it to season grilled, roasted, pan-seared, or air-fried chicken for tacos that are flavorful, balanced, and consistently delicious.

Spice up your chicken tacos!

If you make chicken tacos often, this is the seasoning mix to keep in your pantry. It’s formulated to complement poultry and also works beautifully with ground turkey. The blend lets the mild flavor of the chicken shine while adding a smoky, savory profile that tastes like a restaurant-style taco at home.

Use it as a dry rub, a quick pan seasoning, or combine it into a citrus-based marinade for grilling. It performs well on chicken thighs, breasts, shredded chicken, and even roasted vegetables if you want to extend its use beyond meat.

Ways to use it

Dry rub: Use 2 tablespoons of seasoning per pound of meat. This amount seasons ground chicken or turkey perfectly for quick tacos or skillet meals.

Air fryer: Rub seasoning on boneless, skinless chicken breasts and air fry at 400°F for about 10 minutes, flipping halfway, until cooked through.

Oven roasting: Roast seasoned breasts or thighs at 425°F for roughly 12–20 minutes depending on thickness. Let the chicken rest a few minutes before slicing to keep it juicy.

Pollo asada-style marinade: Stir together 2 tablespoons olive oil, 1/4 cup fresh citrus juice (lime and/or orange), and 4 tablespoons of the chicken taco seasoning. Add 2 pounds of chicken breasts or thighs, ensure pieces are coated, and marinate for 30 minutes to 4 hours. Grill or broil until nicely charred and cooked through.

Serve the cooked chicken in warm flour or corn tortillas with your favorite toppings: salsa, guacamole, pickled onions, crumbled cheese, cilantro, and a squeeze of fresh lime all complement this seasoning well.

This seasoning is lighter and brighter than blends made for beef. A smoky backbone and balanced aromatics enhance poultry while letting the meat’s natural flavor come through, resulting in juicy, flavorful tacos every time.

Ingredients

  • 2 tablespoons chipotle powder, or chili powder
  • 2 tablespoons smoked paprika
  • 2 tablespoons dried oregano
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon ground cumin
  • 1 tablespoon salt

Instructions

  • Use a spoon to stir all ingredients together in a small bowl until evenly combined. Transfer the seasoning to an airtight container and store in the pantry for up to 6 months. When using, measure out 2 tablespoons per pound of meat, or adjust to taste.

Notes

  • Make it spicier: Add red pepper flakes or cayenne pepper. Start with 1 teaspoon and increase to your preferred heat level.
  • Seasoning guideline: I recommend using about 2 tablespoons of seasoning per pound of meat for a well-seasoned result.
  • Scale up: To double the batch, simply double each ingredient. Store larger batches in an airtight jar in a cool, dry pantry.
