After fifteen years of recipe development, few dishes still surprise me — this is one of them. It’s so good I’ve prepared it both as a full pot pie and as mini versions for parties.
This dish is ideal for preparing ahead: make the filling a day or two in advance, then assemble and bake the pot pie the next day in under an hour. The recipe delivers complex, restaurant-style flavor with simple, manageable steps.

- Short ribs – Use beef chuck short ribs (often labeled English-style). Bone-in short ribs provide the best flavor, but boneless also work. Slow braising produces very tender, flavorful meat.
- Steak seasoning – A coarse seasoning blend (kosher salt, cracked black pepper, dried minced onion and garlic) works well. A pre-made Montreal-style steak seasoning is an easy option if you don’t want to blend your own.
- Puff pastry – Sold frozen in two-sheet packages. Thaw the pastry before assembling; it needs at least 30 minutes at room temperature to soften enough to roll and shape.

Caramelize the onions
While the short ribs braise, dice and slowly caramelize the onions until deeply browned — plan about 90 minutes. When the short ribs finish, lift them from the cooking liquid, remove and shred the meat, and reserve the braising liquid. Strain the liquid and measure 2 cups to use in the filling.




Cool the filling before assembling. It can be made up to four days ahead and refrigerated, or frozen for longer storage.

With the filling this recipe yields, you can make approximately 28 mini pies, which requires three sheets of puff pastry.
Make-ahead and freezer tips
You can prepare the pot pie filling in advance and refrigerate it for up to five days. I do not recommend assembling the pot pie with puff pastry far ahead of baking, because the pastry will lose its flakiness if it sits assembled for long.
For longer storage, freeze the cooled filling in a freezer-safe container for up to six months. Thaw overnight in the refrigerator before assembling and baking. A double batch is convenient: bake one pot pie now and freeze the other filling for later.
When freezing a batch, cool it completely before sealing the container to preserve texture and flavor.

Short Ribs
- 4 pounds bone-in beef chuck short ribs (or 3 pounds boneless short ribs)
- 4 tablespoons steak seasoning
- 2 tablespoons olive oil
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)

- 3 tablespoons unsalted butter
- 3 pounds onions, diced into ¼-inch squares
- ½ teaspoon sea salt

- 3 cloves garlic, minced
- 2 cups beef broth (reserved from the short ribs)
- ¼ cup all-purpose flour
- 2 sheets puff pastry dough, thawed
- 1½ cups Gruyère cheese, shredded
- 1 egg (for egg wash)
Instructions
Short Ribs
- Preheat oven to 350°F.
- Rub the short ribs with steak seasoning to coat all sides.
- Heat 2 tablespoons olive oil in a large Dutch oven over medium-high heat. Sear the short ribs until browned on all sides.
- Pour in beef broth and scrape up browned bits. Add Worcestershire, bay leaves, and thyme. Cover and transfer to the oven. Braise for 3 hours, until the meat is fork-tender.
- Remove the pot from the oven. Lift the short ribs from the liquid and shred the meat using two forks. Strain the braising liquid through a fine-mesh strainer and measure out 2 cups of broth for the filling; discard solids.
Caramelized Onions and Filling
- About 1½ hours into the short rib braise, begin caramelizing the onions. Melt butter in a large pot over medium-high heat, add the onions and spread them evenly.
- Cook 5 minutes, sprinkle with salt, then reduce heat to medium. Cook for 90 minutes, stirring every 15 minutes, until deeply caramelized.
- Add the minced garlic and cook 1 minute. Pour ¼ cup of reserved beef broth into the pot to deglaze and stir.
- Sprinkle the flour over the onions and stir to combine; cook 1 minute.
- Add the remaining 1¾ cups beef broth and stir. Add shredded short ribs, bring to a boil over high heat, and cook until nearly all liquid has reduced, 5–7 minutes. Remove from heat and cool.
Assemble the Pot Pie
- Preheat oven to 400°F.
- On a lightly floured surface, roll one thawed puff pastry sheet into a 12-inch square. Press into an 8″x8″ casserole dish, trim excess, and prick the bottom and sides with a fork.
- Cover the pastry with foil and blind-bake for 25 minutes. Remove foil and set the crust aside.
- Spoon the cooled short rib and onion filling into the pre-baked crust and top with shredded Gruyère.
- Roll the second pastry sheet slightly thinner and place it over the filling. Trim edges, cut four diagonal vents in the top, and brush with an egg wash (whisk egg with 1 teaspoon water).
- Bake for 25 minutes, or until the puff pastry is golden brown and puffed. Let rest a few minutes before serving.
Notes
- Watch the pot pie in the oven during the final minutes so the crust reaches your desired level of golden brown.
- Bake the pot pie on the lower oven rack for even heat distribution so the filling is hot and the crust crisps properly.
- Do not assemble the pot pie with frozen puff pastry; always thaw the pastry before building the pie.
- To make mini pot pies: roll pastry thinner, use a 5-inch cutter to make circles, press into a muffin tin, blind-bake 10–12 minutes, fill with 3 tablespoons of filling, top with Gruyère, and bake 8 minutes until heated through. This recipe yields about 28 mini pies with three sheets of puff pastry.
