Introduction to Buffalo Chicken Smash Burgers

Inspired by the launch of my latest eBook, Buffalo Style: Ditch the Wings, Keep the Sauce, I set out to create a truly innovative buffalo-flavored dish. With the immense popularity of smash burgers captivating food lovers everywhere, the idea of infusing ground chicken with those iconic spicy notes felt like a natural, exciting evolution. This recipe is more than just a burger; it’s a celebration of flavor, texture, and the sheer joy of simple, delicious home cooking.

The magic of smash burgers lies in their incredible efficiency and sensational taste. By pressing the patties thinly onto a scorching hot griddle, you achieve an unparalleled crispy crust while locking in all the savory juices. This technique ensures a swift cooking process, often less than 10 minutes, making it a dream come true for busy evenings. For this specific recipe, I’ve taken ground chicken and elevated it with my renowned chicken wing seasoning. This unique blend isn’t just an addition; it’s the secret ingredient that injects an unbelievable depth of flavor, transforming ordinary chicken into an extraordinary burger experience.

But the journey doesn’t end with the patty. Each burger is crowned with perfectly melted pepper jack cheese, adding a delightful spicy kick that complements the buffalo theme. To finish, a generous drizzle of homemade buffalo sauce, expertly combined with either creamy blue cheese or tangy ranch dressing, ties all the vibrant flavors together. This harmonious blend creates a burger that’s juicy, cheesy, spicy, and utterly satisfying. While delicious as is, this chicken smash burger is also incredibly versatile, inviting you to customize it with your favorite toppings. Whether you’re seeking an effortless meal after a long day or preparing a crowd-pleasing spread for game night, this recipe promises deliciousness with every bite.

Essential Ingredients for Your Smash Burger

Creating an exceptional Buffalo Chicken Smash Burger starts with selecting the right ingredients. Here’s a detailed look at what you’ll need and why each component is crucial for achieving that perfect flavor and texture:

  • Ground Chicken: Opt for 96% lean ground chicken with 4% fat, typically found in the meat aisle of most grocery stores. This specific fat content is key; it provides just enough moisture to keep your patties incredibly juicy and prevents them from drying out during the high-heat cooking process, without making them greasy.
  • Chicken Wing Seasoning: This isn’t just any seasoning; it’s the absolute SECRET INGREDIENT that truly elevates these burgers above the rest! Clicking the link will take you to the simple 6-ingredient recipe, which combines chili powder, sea salt, garlic powder, onion powder, paprika, and cayenne pepper. Each spice plays a vital role, delivering a complex and robust flavor profile that mimics the savory, slightly smoky, and fiery notes of classic buffalo wings, directly into your burger patty.
  • Blue Cheese Dressing or Ranch Dressing: A classic pairing with buffalo flavors, this creamy dressing serves as a delicious counterpoint to the spice. Blue cheese offers a pungent, tangy depth, while ranch provides a milder, herb-infused creaminess. Choose based on your personal preference to create a rich, cooling element that balances the heat of the buffalo sauce.
  • Buffalo Sauce: The heart of our buffalo flavor! I personally favor Frank’s Red Hot Buffalo Sauce for its authentic, consistent flavor and perfect level of heat, but feel free to use your preferred brand. Ensure it’s a true buffalo sauce, not just hot sauce, for that signature buttery and tangy profile.
  • Vegetable Oil: A small amount is essential for achieving that beautifully crispy, caramelized crust on your smash burger patties. It helps conduct heat efficiently and prevents sticking, especially when cooking at high temperatures.
  • Hamburger Buns: While any hamburger bun will work, I highly recommend using brioche buns. Their soft, slightly sweet, and buttery texture perfectly complements the savory and spicy flavors of the burger, providing a luxurious mouthfeel. Alternatively, sturdy potato buns or classic sesame seed buns are excellent choices that hold up well to juicy toppings.
  • Pepper Jack Cheese: For an added layer of spice and irresistible meltiness, pepper jack cheese is the perfect choice. Its subtle heat blends beautifully with the buffalo sauce. If you prefer a different flavor, consider sharp cheddar for a robust, tangy bite, Monterey Jack for a milder, creamy melt, or even blue cheese crumbles for an intense, pungent kick.
  • Optional Toppings: Sliced Jalapeños, Thinly Sliced Red Onion, Shredded Iceberg Lettuce: These toppings aren’t just for decoration; they provide essential textural contrast and fresh flavor. Jalapeños amplify the heat, red onion offers a sharp, crisp bite, and shredded lettuce adds a refreshing crunch, making each bite a dynamic experience.

Step-by-Step Guide to Making Buffalo Chicken Smash Burgers

Get ready to cook! These step-by-step instructions, complete with detailed guidance, will help you create perfect Buffalo Chicken Smash Burgers with ease. The full, exact ingredient quantities can be found in the recipe card at the bottom of this post.

  1. Prepare the Signature Buffalo Sauce: In a small bowl, whisk together the buffalo sauce and your choice of blue cheese or ranch dressing until well combined and smooth. This creates a creamy, tangy, and spicy spread that will coat your buns. Set this delicious mixture aside to await assembly.
  2. Portion and Season the Chicken: In a large bowl, gently combine the ground chicken with the chicken wing seasoning. Be careful not to overmix, as this can lead to tough burgers. Once seasoned, divide the mixture into 8 equal two-ounce balls of meat. For precise measurements and consistent patty size, I highly recommend using a kitchen scale. Even portions are crucial for even cooking.
  3. Toast the Hamburger Buns: Due to the rapid cooking time of smash burgers, it’s essential to prepare your buns first. Heat a griddle or large skillet over medium-high heat. Add approximately 1/2 teaspoon of vegetable oil to the hot surface. Place the hamburger buns face-down on the griddle and toast them for about 1 minute, or until their edges are golden brown and slightly crispy. This step prevents sogginess and adds a delightful textural element.
  4. Assemble the Toppings on Buns: Once toasted, remove the buns from the griddle. Generously spread the creamy buffalo sauce mixture onto the bottom half of each bun. Then, layer with your desired toppings: shredded lettuce, thinly sliced onions, and sliced jalapeños. Having the buns ready ensures quick assembly once the burgers are cooked.
  5. Smash the Chicken Patties: Increase the griddle heat to high. Place each of the seasoned chicken balls onto the scorching hot griddle, ensuring adequate spacing between them. Immediately place a small piece of parchment paper over each chicken ball. Using the back of a large, sturdy flat spatula or a burger press, firmly and quickly smash each ball down into a very thin burger patty, about ¼ to ½ inch thick. Cook for 1 minute on the first side until a beautiful, crispy brown crust forms.
  6. Add Cheese and Stack: Carefully flip the smashed patties. Immediately place a slice of pepper jack cheese onto four of the burger patties. Allow them to cook for 1 minute on the second side, giving the cheese time to melt perfectly.
  7. Create Double-Stack Burgers and Serve: Once the cheese is melted, take the four uncheesed patties and gently place them on top of the cheese-topped patties. Cook for an additional 30 seconds to allow the flavors to meld and the cheese to further soften. Promptly remove the double-stacked burgers from the griddle and place them directly onto your prepared buns. Serve these incredibly juicy and flavorful Buffalo Chicken Smash Burgers immediately while they are hot and fresh!

Customize Your Creation: Optional Toppings

One of the best aspects of a smash burger is its adaptability! While the core buffalo chicken flavor is outstanding, you can truly make this recipe your own by experimenting with a variety of toppings. Whether you prefer traditional burger accompaniments or unique vegetables that complement buffalo chicken, here are some fantastic ideas to inspire you:

  • Caramelized Onions: Elevate your burger by swapping raw onions for sweet, deeply flavorful caramelized onions. Their jammy texture and rich taste provide a wonderful contrast to the spicy buffalo notes.
  • Pickled Onions: For a vibrant burst of tangy and slightly sweet flavor, pickled onions are an excellent choice. Their crisp texture and bright acidity cut through the richness of the burger and sauce beautifully.
  • Shredded Carrots: Add a subtle sweetness and a refreshing crunch with a handful of finely shredded carrots. They’re a classic component in many buffalo-inspired dishes.
  • Fresh Cilantro Leaves: A sprinkle of fresh cilantro introduces a bright, herbaceous note that can lighten the richness and add a unique aromatic quality to your burger.
  • Sliced Tomatoes: Juicy, ripe tomato slices offer a burst of freshness and a slight acidity, providing a classic burger topping experience that’s always welcome.
  • Sliced Avocado: Creamy, rich avocado adds a luxurious texture and a mild, buttery flavor that wonderfully mellows the heat of the buffalo sauce, offering a delightful contrast.
  • Spinach: For a milder, slightly earthy flavor and an extra boost of greens, replace the shredded iceberg lettuce with fresh spinach leaves.
  • Crispy Bacon: Introduce an irresistible salty crunch and smoky depth by adding slices of crispy bacon. My oven-baked bacon recipe yields perfectly crispy strips that are ideal for this burger.

Remember, you can also simplify the sauce by opting to use only buffalo sauce on the burgers, if you prefer a purer, unadulterated spicy kick over the creaminess of blue cheese or ranch dressing.

Mastering the Smash Burger: Recipe Tips

Achieving smash burger perfection is all about technique and timing. Follow these essential tips to ensure your Buffalo Chicken Smash Burgers turn out incredibly flavorful, juicy, and crispy every single time:

  • Always Prep Buns and Toppings First: This is perhaps the most crucial tip for smash burgers. Because the patties cook in a mere 2-3 minutes, you simply won’t have time to prepare anything else once they hit the griddle. Make sure your buns are toasted, sauces are mixed, and all your desired veggies or extra toppings are sliced and ready to go before you even think about cooking the chicken patties. This ensures a seamless and stress-free assembly process.
  • Make it “Protein Style” for a Healthier Option: If you’re looking for a low-carb, gluten-free, or simply lighter alternative, ditch the hamburger bun entirely! Instead, wrap your delicious buffalo chicken smash burger in two large, crisp leaves of iceberg lettuce. The lettuce provides a refreshing crunch that perfectly complements the rich burger and spicy sauce.
  • Ensure Your Griddle is Piping Hot: High heat is non-negotiable for a true smash burger. Adding your chicken balls to a properly preheated surface (ideally between 400-450°F / 200-230°C) is key for food safety and, more importantly, for achieving that coveted, deep golden-brown sear known as the Maillard reaction. This quick, intense sizzle creates an incredibly flavorful, crispy crust on the outside while keeping the inside wonderfully juicy.
  • No Griddle? A Skillet Works Wonders: Don’t worry if you don’t own a dedicated griddle! A large cast iron skillet is an excellent substitute, providing the necessary high heat retention and even cooking surface. Depending on its size, you might only be able to cook 2-4 patties at a time to avoid overcrowding, which can lower the temperature and steam the burgers instead of searing them. A cast iron griddle pan is another fantastic option, usable on both stovetops and outdoor grills.
  • Don’t Overwork the Meat: When mixing the ground chicken with seasoning and forming the balls, handle it as little as possible. Overworking the meat can lead to dense, tough patties. Gentle handling keeps the burgers tender and juicy.
  • Use Parchment Paper for Smashing: Always place a piece of parchment paper between your chicken ball and the spatula when smashing. This prevents the raw chicken from sticking to your tool, ensuring a clean smash and an even patty shape.
  • Invest in a Sturdy Spatula: A thin, flimsy spatula won’t cut it for proper smashing. You need a large, heavy-duty metal spatula or a dedicated burger press to apply enough firm, even pressure to flatten the patties quickly and efficiently.

Perfect Pairings: What to Serve with Your Burgers

What’s a fantastic burger without an equally fantastic side? While burgers and fries are a match made in culinary heaven, these spicy Buffalo Chicken Smash Burgers also shine when paired with a variety of delicious accompaniments. Here are some of my favorite side dish recipes, many of which also feature that beloved buffalo sauce, to complete your meal:

  • Air Fryer French Fries: Crispy on the outside, fluffy on the inside, these fries are a classic complement that can handle a generous dunk in extra buffalo sauce.
  • Animal Style Fries: Elevate your fry game with these loaded fries, offering a rich, savory, and tangy experience that stands up to the bold burger flavors.
  • Truffle Fries: For a touch of gourmet indulgence, the earthy aroma of truffle fries provides a sophisticated contrast to the spicy chicken.
  • Air Fryer Tater Tots: These crispy potato gems offer a fun, nostalgic, and perfectly dippable side.
  • Air Fryer Onion Rings: Sweet, crispy, and savory onion rings are another fantastic textural and flavor contrast.
  • Buffalo Macaroni Salad: Lean into the buffalo theme with a creamy, spicy pasta salad that echoes the flavors of your main course.
  • Buffalo Potato Salad: A hearty and flavorful potato salad infused with buffalo sauce makes for a satisfying and coherent meal.
  • Buffalo Zucchini Chips: For a lighter, crispy alternative that still brings the heat, these zucchini chips are a delightful choice.

And don’t forget a refreshing beverage to wash it all down! A cold beer, a crisp hard cider, or even a refreshing lemonade can provide a perfect balance to the rich and spicy flavors of your Buffalo Chicken Smash Burger.

Ingredients

  • ¼ cup blue cheese dressing, or ranch dressing
  • ¼ cup buffalo sauce

  • 4 slices pepper jack cheese

Optional Toppings

  • 1 jalapeño, sliced
  • ½ cup thinly sliced red onion
  • 1 cup shredded iceberg lettuce

Instructions

  1. In a small bowl, combine the blue cheese dressing and buffalo sauce. Set it aside.
  2. Combine the ground chicken and chicken wing seasoning, then measure out the seasoned chicken into eight 2-ounce balls of meat.
  3. Heat a griddle over medium-high heat. Add the vegetable oil to the griddle and place the buns face-down on the griddle.
  4. Toast the hamburger buns for approximately 1 minute, or until browned around the edges.

  8. Flip the burgers and place a piece of cheese on half of the burger patties. Cook for 1 minute.
  9. Place the other burger patties, not topped with cheese, on top of the cheese-topped burger patties.
  10. Cook for 30 seconds, then remove the burgers from the griddle and place them on the prepared buns.

Notes

  • To make this chicken burger recipe “protein style”, ditch the bun and replace it with two large leaves of iceberg lettuce. This is also a great option to make the burger gluten-free and low carb.
  • If you don’t have a griddle, you can make the burgers in a skillet. Depending on the size of your skillet, you’ll probably only be able to fit 2, or maybe 4, burger patties in the skillet at a time. I recommend a large cast iron skillet, or a cast iron griddle pan if you have one available. A cast iron skillet can be used on the stove, or on a grill, to make these burgers.
