The journey of this homemade Thai peanut sauce began years ago, initially pairing it with unique dishes like PB&J Chicken Skewers – a testament to its incredible adaptability. What started as a staple for one innovative recipe quickly became a beloved, go-to condiment in our culinary repertoire. Its enduring popularity on the blog speaks volumes about its unforgettable taste and ease of preparation.

Since its initial creation, this magnificent Thai peanut sauce has found its way into numerous other beloved recipes. Its rich, nutty, and subtly spicy profile complements a wide range of ingredients and cooking styles. You can find it starring in wholesome Thai Peanut Sweet Potato Buddha Bowls, lending its signature flavor to quick and easy Thai Peanut Vegetable Pasta, or even transforming savory Thai Peanut Pulled Pork Roti Bread Pizzas into extraordinary meals. Now, we’re taking this incredible sauce to new heights by incorporating it into these irresistible pot stickers. This fusion dish is a harmonious blend of East Asian cooking traditions, resulting in a scrumptiously addictive appetizer. Making pot stickers at home might seem daunting, but with this straightforward recipe, you’ll discover how simple and rewarding it can be. The process involves crafting the aromatic peanut sauce, preparing a flavorful chicken filling, neatly folding them into delicate wonton wrappers, and then using the classic “pot sticker” cooking method – pan-frying to achieve a crispy bottom, followed by steaming to perfectly cook the filling and soften the wrapper. The result is a perfect balance of textures and tastes, far superior to anything store-bought.

One of the true joys of cooking this dish is the preparation of the filling. The ground chicken is sautéed with minced garlic, fresh ginger, and shallots, infusing it with an incredible depth of flavor. These aromatic vegetables are essential in Thai and Chinese cooking, providing a fragrant base that complements the richness of the peanut sauce beautifully. Once the chicken is cooked, a generous amount of our homemade peanut sauce is folded in, along with fresh cilantro, ensuring every morsel of the filling is bursting with that distinctive Thai peanut goodness.

Ingredients

For the Thai Peanut Sauce

  • 1 ½ cups coconut milk
  • 1 cup creamy peanut butter
  • ¼ cup Thai red curry paste (recommended brand link)
  • 2 tbsp apple cider vinegar
  • 2 tbsp soy sauce
  • ¼ cup brown sugar
  • 1 tsp fresh lime juice (from approximately 1 lime)

For the Chicken Pot Stickers

  • 1 lb ground chicken
  • 4 cloves garlic, minced
  • 2 tbsp fresh ginger, minced
  • 1 large shallot, minced
  • 2 tbsp fresh cilantro, chopped
  • 28 round wonton wrappers*
  • 4 tbsp sesame oil, divided (recommended brand link)

*Note: Wonton wrappers are typically found in the refrigerated section of most grocery stores.

Instructions

  1. In a blender or food processor, combine all ingredients for the Thai Peanut Sauce (coconut milk, peanut butter, red curry paste, apple cider vinegar, soy sauce, brown sugar, and lime juice) until completely smooth and creamy. Set aside.
  2. In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the ground chicken, minced garlic, minced ginger, and minced shallots. Sauté, breaking up the chicken with a spoon, until it is fully cooked through and no longer pink, about 5-7 minutes.
  3. Transfer the cooked chicken mixture to a large bowl. Add 1 cup of the prepared Thai peanut sauce and the fresh cilantro. Mix well to combine all ingredients evenly.
  4. Allow the chicken mixture to cool slightly (about 10-15 minutes) before proceeding to assemble the pot stickers. This makes the filling easier to handle and prevents the wrappers from tearing.
  5. To assemble each pot sticker: Lay a round wonton wrapper flat on a clean surface. Dip your finger in water and lightly brush the entire circumference of the wrapper’s edges to moisten them.
  6. Place about a spoonful (approximately 1 tablespoon) of the cooled Thai peanut chicken filling in the exact middle of the moistened wonton wrapper.
  7. Fold the wonton wrapper in half over the filling, creating a half-moon or crescent shape. Gently crimp and seal the edges together with your fingers, pressing firmly to ensure no filling leaks out during cooking. For a decorative touch, you can create small pleats along the sealed edge.
  8. Repeat this process with the remaining wonton wrappers and chicken filling until all 28 pot stickers are formed.
  9. To cook the pot stickers: Heat 1 tablespoon of sesame oil in a large non-stick skillet over medium-high heat. Ensure the oil is shimmering but not smoking.
  10. Carefully place as many pot stickers as will fit comfortably in a single layer in the skillet without overlapping. Avoid overcrowding the pan to ensure even browning.
  11. Cook for 2-3 minutes, or until the bottoms of the pot stickers are beautifully golden brown and crispy. Keep a close eye on them to prevent burning.
  12. Pour ¼ cup of water into the skillet. Immediately cover the skillet tightly with a lid and allow the pot stickers to steam for 5 minutes. This steaming process helps cook the chicken filling thoroughly and softens the wonton wrappers.
  13. Remove the cover, flip the pot stickers to the other side, and continue to cook for an additional 2-3 minutes until the water has completely evaporated and the other side is also slightly golden.
  14. Transfer the cooked pot stickers to a serving plate. Repeat steps 9-13 with the remaining batches of pot stickers, adding 1 tablespoon of sesame oil and ¼ cup of water for each new batch.
  15. Serve the hot Thai Peanut Chicken Pot Stickers immediately, accompanied by the reserved Thai peanut sauce for dipping. Garnish with extra fresh cilantro if desired.
